What's in My CSA Box: Satsuma Mandarins

I came across a recipe for an orange-soaked bundt cake and was eager to give it a try. I decided to use mandarins instead of oranges since we had soooo many of them from the CSA box. I also decided to use coconut oil instead of vegetable oil, since I've recently come to really adore the taste and texture that coconut oil brings to dishes.

"CSA" stands for "Community Supported Agriculture." I'm in green-happy Northern California, so I've fortunate to have several such services in my area. I selected Farm Fresh to You and have been very satisfied.
